Cake Mix Magic





Little boxes of cake mix....what a wonderful item to stock up on and keep on hand! Of course it's great for a quick cake anytime.....with a large family sometimes it's nice to make one just because..... but you can do MORE with this little box...besides it's normal directions here's some other things you can do with it.

Dump cakes:
1 box of cake mix
1 can of pie filling
3 eggs
That's it! Mix all by hand -pour into a greased bunt pan and cook at 350 for about a half hour or so. You'll know when it's done, it looks like a normal cake...can do in a 9x13 pan too just watch carefully. You can mix and match the cake mix and the can of pie filling to match the flavors you want, such as chocolate mix and cherry filling - spice cake mix and apple filling- yellow cake mix and peach pie filling- spice cake with pumpkin pie filling (get the one with the spices and stuff added already- not the plain-libby's is good) white cake mix and cherries or pineapple. You won't really need icing on these , they are moist and good but a powdered sugar drizzle over the bunt pan one looks really pretty!!

Cookies:
1 box of cake mix, any kind
1 container of icing, any kind
2 eggs
1/3 cup vegetable oil
Preheat oven at 350 degrees. Take cake mix and stir in eggs and oil. Roll into small shaped balls, then take a cup and use it to flatten them. Bake for 12-15 minutes or until lightly brown. Allow them to cool a few minutes, then ice and enjoy!

This is a really easy-fast fun way to make some cookies!!! Cake mix is really affordable...sometimes you can find them bogo (buy one get one)....or specials like 10 for 10 dollars and my local Save-a-Lot has them for only 79 cents. Coupons would be good here too....stock up and keep a few handy! You can skip the icing if you want and make your own from scratch or skip it altogether and add things in to the batter.... some good combos are:



1. Carrot cake mix with nuts, raisins and cream cheese frosting.
2. Butter cake mix with toffee bits.
3. Yellow cake mix and chocolate chips.
4. Chocolate cake mix add butterscotch chips with walnuts (white chips or peanutbutter chips are good too)
5. Spice cake mix with raisins and carrot shreds.
6. White cake mix with crushed candy canes (nice for school parties) or m&m's or even leftover jelly beans or chopped up leftover chocolate from any holiday!!
Use your imagination really.....cake mix flavors are almost endless so this could be really fun!

Easy Cobblers/Crumbles:
1 box cake mix
1 stick butter-room temp
1 can pie filling or fruit in syrup (peaches are GOOD)
Dump filling/ fruit in a 9x9 baking dish....in a separate bowl dump cake mix. Cut in room temp butter- hands work good for this part (depending on the size of your can of fruit you may only need HALF this mixture to cover top- just put leftover mix in a baggie in freezer for next time!)....now sprinkle over fruit and bake till golden at 350....you can throw some oatmeal in the topping mix and some extra brown sugar if you want the topping more crunchy possibly chopped nuts too...maybe add a little more butter if you do so.....these are quick and easy, I like to serve them with dinner as a fruit side dish...YUM !

Oh WOW!! My aunt (she passed away over a decade ago) used to make cookies out of cake mix! I was just thinking the other day how good they were and wished I knew how she did it! I have a whole bunch of these mixes, I'm going to make me some cookies :D
