I just happen to own a book by Ceil Dyer called The Plan-Ahead Cookbook:300 Delectable Ways to Use Leftovers. This is a WONDERFUL book!! Mine is from 1969 and I got it from a yard sale years ago. It's about cooking for planned leftovers....check it out if you ever can find it! What this book did for me was first.....it gave me inspiration and second.....it changed my mindset on how I looked at leftovers!!! This is a topic I will eventually blog more on and I will always share some of my more fun revamps on food!
This is a revamp for a side dish: Chicken Tarragon Rice! It's so good! I have four kids and a quick lunch we like to do is Chicken noodle soup with grilled cheese sandwiches. Any chicken noodle soup will do. My guys tend to like to eat most of the noodles up....so that leaves me with extra broth left over in the pot. Years ago I used to just throw it down the drain (yikes)!!! Now I don't! I SAVE IT!!
I strain out any stray noodles (go into dog slop bowl) or chicken bits (save those to add back). I will sometimes freeze this if there's only a small bit for soups later, or thicken with cornstarch for gravies to serve over meat or as a base for chicken pot pies....but usually I make a rice side dish with it.

Just use instead of water. Boil, add the right amount of dry rice...add some chopped carrots, tarragon and any bits of chicken meat leftover (spice how every you think your family would like it).....this is great served with roast chicken! I know longer throw out this liquid gold!!! You can use this where ever you may need chicken broth.....you already paid for it..... so go ahead and use it!
