Keeping Corn


So what do you do when you're dear Mother in law gives you 5 dozen ears of fresh from her back yard sweet as sugar corn? Well you EAT some right away while it's SWEET & FRESH....then you learn real quick how to freeze it for later- it's so good you want to keep it ALL!!! We decided to keep it on the cob, we just like it better that way....plus it's a bit easier since you don't have to slice it all off. It's pretty easy, but something I've not tried yet.....so I had FUN!! Mom taught me all about corn - she shared her secrets passed to her by a old country momma she knew way back when they lived in the country and my dear hubby was just a little tot! I LOVE stories like that.....I don't even care if my corn turns out or not.....it was worth just sitting there listening! She told me the old timers would wait till dinner time to pick their corn.....then you'd walk out to pick it....but RUN back to cook it!! The sooner you eat it , the sweeter it stays! SO anyway...blanch your corn, cool quickly and then freeze. It was pretty easy! But mainly it was FUN! We cut our ears in half because we like them that way- it's easier for the kids....plus I can fit more in the pot that way!

This took just under 2 hours....HALF of that time was waiting for the water to boil and shucking then scrubbing all the silk off the corn. Since the corn was free ......it was worth the effort to me! AND I know in the winter it will taste better than whatever the stores have got. I was told you couldn't can this type of corn because it's sugar content is too high.....so it would turn all brown-YUCK! I wonder if that's why canned corn is so tasteless at the store.....is it a LOW sugar variety to keep it "looking" all pretty?

I just love "puttin up" corn! I helped my grandmother and sister do it one summer when I was a teenager. We picked it ourselves then spent the rest of the afternoon processing it. We blanched, cooled, but then used an electric knife to scrape off the corn. We would then mix in sugar and salt and bag it that way. Tastes wonderful!

Maybe next time I'll try it that way....sounds GOOD!!!!
