MYO: Pancake Syrup
It's chilly....brrrrrr....and I'm making stacks of HOT pancakes for dinner tonight!! YUM!! I'll share my pancake syrup recipes.....it's so easy to make. One of the best ever gifts I got from hubby for Christmas many years ago was an electric griddle......with my army sized family...it's one of my most favorite kitchen tools (Shhhh... don't tell my beloved crockpot....) I can make stacks of pancakes.....french toast...grilled cheese...hamburgers....heck even chicken breasts by the dozen!! Get one if you ever can! You won't regret the purchase...Here's the recipes:
Pancake Syrup (I think this might be from Tightwad Gazette)
2 cups warm tap water
4 cups sugar
1-1/2 teaspoons maple flavoring
In saucepan combine the water and sugar heat over medium. Stir til it comes to a rolling boil. Watch it carefully because it may foam and boil over if your pan is too small. If this starts to happen, remove the pan from the heat and turn the heat down. After the syrup boils, cover the pot and simmer it for ten minutes over a low flame. Do not stir it for this ten minutes. Remove the pan from the heat. Take off the lid and cool on the counter for about 15 minutes. Stir in the maple flavoring. Store the syrup in a clean jar. Be careful not to burn yourself!
This one's good too:
Brown Sugar Pancake Syrup
1 cup brown sugar
1/2 cup water
1 Tablespoon butter
a pinch of salt
Bring all ingredients to a boil. Once the sugar is dissolved the syrup is ready to serve. You can also store this and serve cold or at room temperature like store-bought syrup.
If you don't have a pancake recipe try:
1 cup milk
1 medium egg
1 tablespoon oil or melted butter
2 tablespoons sugar (optional)
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 1/2 cups flour
Beat milk, egg, oil and sugar. Add the salt, baking powder and flour. Beat again, mixing until the batter is smooth. Cook
My crew has a BIG appetite...so I usually double this. Sometimes I may throw in an extra egg for more protein...you can sneak in wheat germ or whole wheat flour if you feel so inclined, even fruit and veggie bits!! These are good topped with Pancake Syrup, applesauce, honey, heated jelly or jam (will turn into syrup type topping) or fresh or canned fruit that has been smashed with a fork (banana's are good, berries when in season with a little sugar are yum too)I like to take room temp cream cheese....mix it with powdered sugar till it's sweet ( I never measure the amount, sorry!) Then spread this on a pancake then top with heated strawberry jam....OH MY, sweet goodnesss :D
