For the leftover meal I took the meat and veggies, but NOT the sweet potatoes, heated them all through with some spaghetti sauce and served over some brown rice with a side of fruit. This was very good!
I think as budgets get tighter we should be more mindful of the food we throw out and try to keep that to a minimum always. I save a lot off my grocery bill by trying to incorporate as many leftovers as I can into something else. There are many good books at your local library that could help and inspire you to "use things up!" Give it a try!! Here are a few examples but look through the library catalog, there are many more!

Quick Dinner Do Over
Sometimes it's fun to see how others use up their leftovers ....when ever I start to feel maybe that I don't want to use leftovers up around my house, that it's just too much work... I am reminded of John 6:12 " When they were filled, he said unto his disciples, Gather up the fragments that remain, that nothing be lost." The last part....that nothing be lost has always struck a chord with me....I mean the miracle of feeding SO many... Amen and Amen....but then our Lord Jesus who brought the food to the multitudes directed it to be gathered up for later, WOW...and attitude check for me. So here's a very simple meal we had. Smoked sausage, corn, sweet potatoes and peppers with onions sauteed on the side. This is a fast quick and easy meal for me and I humbly admit....nothing fancy at all...but good none the less
