Sunshine Fruit Salad 2 Ways

I like to keep canned fruits on hand in the pantry. We eat a lot of fresh too....but canned keeps me from always having to run to the store when the fresh runs out. Some really nice cobblers, crisps and pies can be had from canned fruit...and just some simple fruit salads. This is one of our favorites. Here's all you'll need:
Sunshine fruit salad
1 can pineapple chunks
1 can mandarin oranges
maraschino cherries
Drained and mix together the pineapple and mandarin oranges then top with a few maraschino cherries. That's it!


For a Fancier kicked up version good enough for any potluck or carry in....

Fancy Sunshine Fruit Salad
1 small box pudding (banana, vanilla, OR lemon-all are equally good)
1 can pineapple chunks
1 can mandarin oranges
1/2 cup coconut flakes
maraschino cherries
Chopped walnuts

Drain and mix pineapple, mandarin oranges and coconut....set aside. In a separate bowl mix pudding up only using HALF the milk called for (you want it THICK). Mix pudding with fruit, stir to coat well...but try not to crush the fruit. Top with chopped walnuts and a cherry. This is SO good and tastes like an ice cream sunday!! You can make it a little healthier by using skim milk and a sugar free pudding mix if you need to. P.S. When you finish up your jar of maraschino cherries DON'T toss the syrup down the drain...take it and mix with a cold glass of milk for a really yummy treat-Cherry Milk...every bit as good as strawberry!
