Zucchini Bread

Zucchini puree

My dear Brother is still bringing me zucchini! His garden went in late so the goodies are still coming! This zucchini bread is kinda the same recipe as the applesauce bread with just a few minor changes. Zucchini being the main one!

1 2/3 cups white or wheat flour
1 1/2 teaspoon spices (cinnamon, all spice or even pumpkin pie spice)
1 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup water
1/2 cup zucchini puree
1/3 cup canola oil
1 teaspoon vinegar

350 degrees x 35 mins. In 8 inch ungreased pan mix all dry ingredients together. Mix all wet ingredients together in a large measuring cup then add to dry. Mix all to combine. Wipe sides of pan...bake at 350 for about 35 mins. To get zucchini puree...just peal, cube, boil and mash your zucchini.

You can make pumpkin bread with this recipe too. And even banana bread...but for banana bread please use plain white sugar and add a bit of vanilla instead of any spices so you don't overwhelm the banana taste. I usually use 2 mashed small bananas.
