Fried Ice Cream

Oh YUM doesn't that look good? It was!! We had Mexican for dinner the other night so I tried a new dessert. Mexican Fried Ice Cream.....oh my. It really isn't that hard. There are no pictures from while it was being fried because I know myself....I can't multi task that good...LOL!


Fried Ice cream
Vanilla Ice cream
Corn Flakes
sugar
cinnamon
oil to fry in (enough to submerge ball in)
Honey and whipped cream

These amounts are approximate...just eyeball it. We made 6 large balls of ice cream. Put about 2 cups cornflakes into bowl. Add 1/2 cup sugar plus 2 tablespoons cinnamon. Use hands to slightly crunch cornflakes and mix all together. Scoop ice cream into large packed ball. Roll ball in cornflake mixture, press mix in with hands. Place coated ball on plate in freezer for about 1 hour before frying to harden. Heat oil to medium high. Hold frozen coated ball in tongs and dip in hot oil for 2-4 seconds. Drain on paper towels. Place in bowl, drizzle with honey and garnish with whipped cream sprinkled with cinnamon.
