Well after being recharged from my Mommy Time Out.....I felt like creating something yummy for snack time! I have read about this recipe trick and decided tonight was THE night to give it a go! Chocolate~Chocolate chip Muffins! MMMMM they turned out great! The trick here is to use a cake mix and a 15 oz can of pumpkin here's the "official" recipe:
1 Chocolate cake mix
1 15 oz can pumpkin
1/4 cup water
Chocolate chips (What ever looks good to you!)
Mix, cook @ 350 degrees for 15-20 mins
These turned out really nice! They are a dense, heavier type muffin....but hey they're good! You can do other combo's too...use the same directions but skip the choco chips. Try spice cake mix or carrot cake mix....or even a yellow cake (maybe add some pumpkin pie spice since yellow cake mix is plain) Remember these have no eggs so if you have an allergy to eggs this is good! Or if you're out of eggs and oil....no problemo! You can add pecans or walnuts for a little more protein....PLUS this is a slightly sneaky way to get some more fiber into the kids!
