Depending on the size of your family..double or triple this recipe to make 3 nights of different meals!! While we're here talking about chicken in the crock pot...you know you can put frozen meat in the crock pot, right? Works just fine.... man, my laziness knows no bounds...LOL...thawing meat is so 1940's !!! j/k some things you HAVE to thaw....but not most meats for the crock pot....talk about easypeasy...if you can just think clear enough in the morning for 15 mins or so...you can have dinner ready with little work.....and if you make enough like with this recipe...it'll cut your work down for the next couple nights too...woohoo!!! I LOVE recipes like this
Crock Pot Mexican Chicken
1 pound skinless boneless chicken breast halves
1/2 pack taco seasoning
15 oz canned black beans
15 oz canned yellow corn
16 oz jar salsa (store brand is fine)
Put chicken breasts in crock pot sprinkle with taco seasoning, cover with can of drained black beans, can of drained corn and jar of salsa. Cook on high 4-5 hours or until chicken is cooked.
1st night: Serve the chicken pieces whole sprinkled with a little bit of shredded cheese (Cheddar is nice) veggies on the side serve with rice.
2nd night: Chicken taco salad. Shred the chicken breasts and mix it back in. Serve over lettuce with cheese and sour cream and more salsa if needed. Serve with corn chips.
3rd night: Chicken and Black Bean Enchiladas. Wrap the shredded chicken mixture in tortillas. Top with enchilada sauce (1 part salsa and 1 part sour cream for sauce) Sprinkle all with cheese. Bake for 30 mins @ 350.
If you have a smaller family OR you made a BUNCH you could then go on the next night and serve some shredded chicken mix in hard taco shells too....or add the shredded mix with a can of crushed tomatoes with green chilies and enough water to thin out- spice with a taco seasoning pack for a chicken mexican soup- serve with a dollop of sour cream, shredded cheese and corn chips-One last quick meal could also be a mexican pizza.....take a premade boboli type pizza shell, spread with salsa (this is your sauce) top with shredded chicken/corn/bean mix...them top with mexican cheeses- so there's three more meals, that could get you through Monday to Saturday if you've got a killer week ahead! For my family of six....to go six days on this plan I would probably triple the amount of the original crock mix (3 lbs chix, 3 cans corn, 3 cans beans-2 or 3 jars salsa)

Great ideas! I've made a recipe like that and froze the leftovers for quick and easy meals later on.
