Dead Apples?
Sometimes we get a good deal on apples, so we buy a lot....I also glean freebies from my brothers property in the fall . We eat as many as we can while they're crisp...then what do ya do...when they're what I like to call... DEAD? These are a few I've done before: Apple pie (of course) Applesauce (as easy as mashed potatoes...peel chop steam mash...add sugar and spice...can be frozen or canned Apple butter~take your applesauce add an equal amount of sugar....some spices or red hots a splash of cider or vinegar ...put in crock pot on low 2 to three hours or till as thick as you like it. Don't burn it!
DRIED APPLES- this we just tried and it worked pretty good! Peel (or not) apples into thin circles..if you've got kids SHOW them the star in the middle ...soak 10 mins in water with vinegar, lemon juice or even salt (this keeps things from browning too much) Drain, pat dry, dry in oven for 3-4 hours (maybe more) on lowest setting (ours is 180 ) till leathery....store in bags or jars up to 6+ months. These turned out really well and I like the idea of a longer storage time...oh you can dust with spice before baking...but this time we did not. These are good to just eat, they have a really intense apple taste....or to chop and add to cereal, trail mix or oatmeal....you can also soak them and make pie. You can do this in a closed car also in the summer (it gets HOT in there!!!) I have dried herbs in my car before with great success!

Put on Rack (You can lay directly on oven racks...cookie sheets or cooling racks like I did)
Dry at 180 for 3-4 hours till leathery (THEY SHRINK A LOT) You could also take them longer to get apple chips!!- This happened to some of my thinner sliced ones

I wish I saw this when I had 52 lbs of apples! Oh well...I am saving it in my favorites for next year. :-)
