Not only are these peanut butter cookies a powerhouse of protein.....they are so easy to make! And I'm ALL about the simple, easy things in life....isn't it already hard enough... why make it any harder than it needs to be? Cookie recipes shouldn't be complicated, especially around the holiday's when we're already short on time and freaking out about other things like why is there no tape in the house!!
Here's the recipe:
Powerhouse Protein Peanutbutter Cookies
1 cup peanut butter (crunchy or smooth)
1 cup sugar
1 egg
Just mix that all up... I roll them in a ball in my hand and then flatten with a fork in the standard criss cross pattern. Bake 350 till done- my oven is about 7 mins....but it depends on how BIG you like to make them. Let them sit on the pan a few minutes to cool before you remove to a cooling rack (DON'T EVER TELL MY KIDS OR DH....but you CAN sneak wheat germ and/or brewers yeast flakes in these for more wholesome yummy goodness.) You can use raw cane sugar too but it's kinda expensive. A couple of these cookies can really help in the protein department if you have a child who won't go for meat......or for yourself when you want something sweet yet still need a protein boost!!!
