Sourdough Help!

In my search for sourdough help I found this recipe and demonstration videos by Serene Allison (of Above Rubies ) while searching You tube for sour dough.. there are LOTS of videos out on there ....I liked the ease and no kneed of this recipe. It seems very easy and low key... just my type of thing. I may try this way out! I am adding , to my starter to get more volume each day.....I'd like to have a big old mess of it before I attempt to make things so I don't run out. My house it sort of cold so my starter isn't as bubbly as when my brother brought it over....he told me he keeps his near his wood stove and that as long as it's still bubbling, that it's still good.....I don't have a wood stove.....only crummy baseboard heat with all it's ups and downs (THANK YOU Lord though for the heat I DO have, I'm not really grumbling ;) ) I hope it isn't going to die!!!!
