Easy No Boil Mac and Cheese #2

I wish I could take credit for this recipe- it's THAT good...but I can't!! Gail over at The Grocery Cart Challenge has it Here. Go check her blog out....LOVE IT!! I did half her original recipe.

Easy No Boil Mac and Cheese
8 ounces cottage cheese (I used small curd)
8 ounces of uncooked macaroni (I used shells this time)
8 ounces water
8 ounces shredded cheddar cheese
Salt, pepper- optional
Put cottage cheese, dry noodles, cheese and water in an 8x8 pan. Mix together well. Place in preheated 350 degree oven. Take out after 30 minutes and stir up good....the warm bits of cottage cheese will melt right in and mix with cheese to make a beautiful sauce. Take a bite to see if noodles are cooked through...be careful it'll be HOT! You can go up to 10 mins more...but don't over bake...it'll dry out. Serve as is or you could always add mushrooms, onions, cooked ground beef, ham, peas or even chili stirred in the end for chili mac! Let your imagination guide you. Eat and Enjoy!!!





This version is really good and more kinda like the shells and cheese you get from a box in texture. My original recipe found here is very rich and more a custardy old fashioned granny home style kind of mac and cheese...both recipes are pure cheesy goodness! This new recipe saves about half the cooking time...LOVE that!!
**If you'd like it a little saucier...just add a few more ounces water**
