We use bread in this house...daily. No fear of carbs here! But sometimes we have ends left over or stale pieces left or a few buns that got old. I usually throw them all in the freezer till I have a pile to do something with. Sometimes it's french toast...sometimes it's a quick wiz for homemade bread crumbs....but this weekend I found another great use. Bread dumplings! Bread Dumpling:
1/2 stick butter
1 cup Milk
1 Bag old/stale bread
2 eggs
salt- optional to season to taste
Heat Milk and butter in microwave till warmed. Crumple bread in bowl and pour warmed milk butter mixture over. Let sit 1 hour. Add 2 eggs (and salt if using) and mix well. Form into balls the size of golf balls or smaller. Cook in boiling liquid 20 mins.
I will use this with chicken and dumplings. I also will not use the parsley and onion that the linked recipe shows....cuz I don't have parsley and my guys don't really like onion much. I got to thinking that I bet you could add sugar and cinnamon to the dough and boil in a simple syrup for a nice sweet treat too...I may try that out one day!
