Quick Applesauce Cake~ Yum
Here's the applesauce cake tutorial! This is the perfect time of year for this goodie! Enjoy!
Quick Applesauce cake
1 2/3 cups white or wheat flour
1 1/2 teaspoon spices (cinnamon, all spice or even pumpkin pie spice)
1 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup water
1/2 cup applesauce
1/3 cup canola oil
1 teaspoon vinegar
350 degrees x 35 mins. In 8 inch ungreased pan mix all dry ingredients together. Mix all wet ingredients together in a large measuring cup then add to dry. Mix all to combine. Wipe sides of pan...bake at 350 for about 35 mins. Let cool...then sprinkle with powdered sugar.
Eat and ENJOY! I recommend out on the back porch with a steamy hot cup of coffee....then go for a walk and let the newly fallen leaves crinkle and crackle under your feet as you walk!

Mix in Pan Eggless Snack Cake
So when the kids are home for the summer...we go through the snacks. I have a few easy mix in the pan snack cake recipes that I'll be sharing. A few are egg less- this is nice for times you run out! I also have a recipe for a bulk mix that can make a few different snack cakes...these ones use one egg. I probably won't video them all because the process is the same! I could maybe video the bulk mix recipe and show one cake from that mix...we'll see as time permits. Here's the recipe for the Chocolate one.
Chocolate Snack Cake

4 tablespoons cocoa (this makes a nice DARK chocolate...you could do 3 or even 2 for a light more milky type chocolate)
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons oil
1/2 teaspoon vanilla
1 tablespoon vinegar
1 cup water
Mix dry ingredients in an UNGREASED 8x8 pan till well blended. Add wet ingredients and stir to combine....being careful around corners. Bake at 350 for 35 to 40 mins.
***LOL I made a terrible mistake in the video!! Please use baking soda NOT baking powder like I did. The recipe here is right NOT the video! The cake wasn't that bad as the powder did make it rise...but it was a bit dry...LOL! ***

Garden
LOL! Last years garden with the Ruth Stout method went SO well!! (Just sold her books on E-Bay for $23.50 EACH so if you own them and want to sell...NOW'S the time!!- Once you "get" the system...you really don't need the books any longer and the extra $$$$ can fund your garden upstart!!!) Garden went well...up until the end that is. NO WEEDS THOUGH!!! Life took over and the garden got left. I did snap out of it and get most items into the freezer. BUT the weeds didn't take over...so overall Ruth Stouts method DID work and if I go a gardening again in the future ....that will be the preferred method. This year since life is still in a recovery mode....I planted 3 tomato plants. That's it...that's my garden. Home grown maters and summer go hand in hand to me. Being able to pick a warm fresh mater from my back yard makes me smile. I have felt no call or nudge from God to put in the garden to end all gardens this year....not one single prompting....so I'm not. I only mention this because certain friends think I'm nutter for NOT putting in my depression garden...my recession trump card?? May God bring blessings and full harvest to those who He may be calling to monster gardens....only He knows His perfect plans. In fact God has me in a period of release right now....releasing things I "thought" I HAD to do....needed to do....must do. All He is asking for right now from me is TRUST and go Day by Day. This summer I found homes for my two beloved bunnies that lived outside. Since they moved outside two years ago....the kids have simply lost interest. That's OK. The kids are that much older and some pets have lost their sparkle. That's OK too! So we talked as a family and decided new homes were in order. They were no longer blessing us and costing us time AND money in care and food. Craig's list is a wonderful tool and within 1 Day we found them a wonderful new home together with a new family! My garden is now located where my bunny hutch was. We tilled the ground under with all it's natural bunny fertilizer, finished the boarder (FREE wood from flower bed we took out) ...mulched with two bags of leftover mulch from last season that didn't even match-we just mixed them well ( FREE) and planted my 3 tomato plants- these I did buy but could only get a six pack near me so I blessed my brother with the three extra plants for his garden!! They will thrive and give me plenty of fresh for mater sandwiches and even a few bags for the freezer and chili this winter....please consider freezing your whole tomatoes...it it SO easy and will set you FREE !!! Ugh. I read this once someplace and it seems fitting here, today...
Life, Liberty and the pursuit of happiness....these are not what God asks for His government, He demands death to self....servanthood and the pursuit of holiness.
Man I have some serious conflict issues in the areas of my Earthly Government and how to Honor God in it all. Do you ever deal with conflict in this area too??

Friday!!
YAY, it's Friday! If ever I needed a Friday, it's today!! We are expected a heavy amount of snow here in Ohio.....I've been the good little trooper and gotten my ducks all in a row to be ready! Oh I hope we don't lose power but if we do I'm all ready with sandwich items and a few one pot type quick meals I can cook on our kerosene heater if need be! Valentines day is coming soon...ugh. I'm not gonna pretend and say I love the Holiday. I don't...in fact it's a sore spot with me. When you marry a man with out a single romantic bone in his body....well ooshie gooshie month of lovey dovey just serves to remind you of what you DON'T have. WRONG attitude I know, I know....God's working with me on this one- obviously, I'm not there... yet. It's just hard to let go of something you feel you need. Any way here's a beautiful song that I JUST LOVE!! Have a wonderful weekend all! Sis...if you're reading this...there's something on it's way to you in the mail!!!

Spot on Mr. Hume!!
Thank you for your courage Mr. Hume to speak the truth....only truth sets people free!
There are so many families that are suffering right now the same fate as Tiger's family....lets all take a few moments to lift them up in prayer...our God is a great and mighty God...and He is in the business of forgiveness, reconciliation and restoration! Strong Christian families will help keep this country great! Conservatism is great....but Christianity -Christ- is the backbone that will keep it standing strong!!
