Fall Apple Upside down Cake

Apples are so fall to me! This is such and easy cake...try it sometime!

Apple Upside down Cake
1/2 boxed cake mix (Yellow, white or spice.)
2 small apples peeled and diced
1/2 stick butter
1/2 cup brown sugar
cinnamon- to taste
Heat oven to 350 degrees...place butter in pan and pan in oven to melt the butter...watch carefully to NOT burn!!! Add brown sugar to butter in pan...stir a little to mix. Place apples on top of butter/sugar. Sprinkle with Cinnamon. Mix up 1/2 of the cake mix*** Pour over apples. Be sure to cover the apples. Bake till done....about 15-25 mins. Take knife and go around rim of pan to loosen cake. Carefully invert onto a plate or platter..be CAREFUL the topping is HOT! Enjoy!!

***If your boxed cake calls for 3 eggs, just use one...it'll still rise. Spray pan if not using non stick. I used a white cake here in the photos and added some cinnamon right into the batter....so good!

I am holding back some of the apples for apple butter so I can make this cake. I don't have a cake mix in the pantry but can whip one up from scratch.

I love apple dessert recipes.

Martha...homemade cake would work just fine! You may need to make 2 if your recipe makes a lot of batter...or make one and then just bake a plain cake that you could freeze to frost later =]

Good idea. I am getting ready to bake in a couple of minutes. It is a beautiful, sunny fall day. Puts me in the mood for some baking.
