Here's the dinner menu we served at our fall get together with the Grandparents M.
Mexican Chicken Chili
Cornbread
Blue nachos served with homemade guacamole
Cheddar cheese and sour cream to top the chili
Veggie tray

Mexican chicken Chili 1 Pk McCormick's White Chicken Chili mix (if you can not find this...use cumin, garlic, red pepper flakes, parsley, salt and pepper to taste...maybe a little corn starch to help thicken it all.)
1 can diced tomato and green chili, undrained
1 can great northern beans, undrained
1 can corn, undrained
1 (or more) lbs Chicken cubed
In a large soup pot...saute chicken till done. Add seasoning pack and 1 cup water. Dump all three undrained canned items into pot. (This is why I call this a dump dinner..LOL!) Heat through 10-15 mins and serve. Here's what it looks like done:
I serve it with shredded cheddar cheese and sour cream...YUM:
