Egg rolls are a simple meal. You can make them at home easily and skip the take out! They can be a part leftover meal too. Like these ones used some leftover shredded pork tenderloin. I first read about these on Full Bellies, Happy Kids! blog. They really are good. You can also just fry them in about 2 inches oil for a minute or two on each side- till golden.
Baked Egg Rolls
Shredded Cabbage and Carrots- I use a pre cut coleslaw bag mix but you could shred your own
Shredded meat- pork, chicken or beef, shrimp is good too!
Diced onion (to taste)
salt and pepper to taste
garlic powder
dash cinnamon (I like this with pork or chicken, NOT beef or shrimp)
soy sauce
egg roll wrappers
About 2 Tablespoons oil.
In skillet heat oil, cabbage, meat of choice, spices and about 2 tablespoons soy sauce...heat through till cabbage wilts slightly. Place about 1-2 tablespoons warm mixture on egg roll wraps, moisten edges and roll up. Bake on a sprayed baking sheet at 400 degrees for 20-25 till golden. Use soy sauce, sweat and sour sauce or Catalina dressing. The dressing might sound strange...but it makes a nice kinda sweet and sour sauce in a pinch.

My daughter LOVES to make these. We usually fry them but I never thought about baking them.. duh.. a much healthier option!! LOL
