Stretching the old grocery bill is one way we save $$$ in our house. Rubber meat is sort of a take off a recipe from another great organizational site I like to visit (Flylady) It's how you take a hunk of meat and make it s-t-r-e-t-c-h into a few different meals.
Rubber Chicken/ Turkey:
1st meal- Roast Chicken (we feed six here so I'll do 2 or three whole chickens) I usually throw veggies and potato in with it so it's all done together. When done pull all leftover meat from bones...throw carcass into crock pot or just back into roasting pan -fill to top with water cook on low overnight- strain broth in morning to use in other meals.
2nd meal-chicken and noodles w/mashed potatoes (reheat chicken pulled from bones the night before, make homemade noodles (cook in broth you made) serve w/mashed potato.
3rd meal Chicken and rice casserole (chop leftover veggies from day one meal into small bits and chop leftover chicken into small chunks...put in a 9x 13 dish with 2 cups dry long grain rice...add 4 cups broth, cover with foil bake 350 x 30 mins or till broth is absorbed....you can throw cheese on top too during the end if you like it. ( if you don't use the cheese you can take any leftovers from this meal and add extra broth or water to it for lunch the next day to have chicken veggie rice soup)
Usually I can get three meals from chicken- sometimes more....other options would be on day two to chop leftover chicken, veggies and potato and add to some thickened broth and put in a pie shell for chicken pot pie...or another good leftover meal is shred the chicken and mix with about a half jar of taco sauce ( or 1 pack taco seasoning) and use for chicken taco's or burritos!! Or shred chicken, add a jar of B-B-Q sauce and serve on rolls-Yum! Cold sliced in sandwiches is good too or add mayo for chicken salad. Extra chicken can be stir fried with soy sauce and any veggies you've got and served over rice for an Asian flair! Chicken and dumplings is easy too...take extra broth, add chicken, cook dumpling in mixture.
Rubber Roast Beef (Get a BIG one-or a few smaller ones)
1st meal- Roast beef dinner, I like to cook mine in the crock pot so I get loads of broth (I add extra water plus a few bouillon cubes, bay leaf and onion)...plus I don't have to watch it ( always a bonus- especially during school and homework time)!!
Leftover beef meals:
Hash- shredded beef w/ cubed potato in gravy
Beef pot pie- take leftover hash add chopped carrot, some green beans (any veggies you like) and more gravy- put all in pie shell
Shepherd's pie-like pot pie only topped with mashed potatoes
Shredded beef BBQ sandwich- shred meat ,heat with bottled BBQ sauce,serve in nice rolls- YUM!
Casserole- like chicken one above
Shredded beef in gravy over wide egg noodles
Shred beef, add taco seasoning pack, use for beef fajitas
Cube beef and stir fry with veggies and soy sauce- serve over rice.
Make beef stew.

First Meal: Sliced Ham dinner
Leftover meals :
Great northern beans w/ham & cornbread
Sliced ham sandwiches
Scalloped potatoes w/ham chunks
Mac and Cheese w/ham chunks
Ham salad sandwiches
Ham & cheese omelet

I have checked out books from the library about planned leftovers and there is some new show on the food network where a lady shows you how to prep for 3 meals at a time......when I cook this way, it saves a lot of time and seems to make the dollar go that much farther...when $$$ are tight ,I know I can buy one good roast and a few whole chickens and feed us well all week long with a little thought and planning. Don't be afraid to use your imagination! The more you use it, the stronger it will get! I am sure there are many other easy meals I have yet to think of.....but hopefully these give you a good start!!
