Coconut Cookies
Beautiful coconut cookies. This is my favorite version of the cake mix cookies so far!! Grab some coffee or a nice iced tea, a good book, and you're all set for the afternoon! Ball Jars make nice canisters if you feel like gifting some of your homemade cookies. Tie a cute ribbon or just pretty yarn around the top.
Coconut cookies
1 White cake mix
1 egg
1 tablespoon melted butter
3 tablespoons water
1/2 teaspoon coconut extract (this is optional)
1/2 cup flaked coconut (I used sweetened)
Mix first five ingredients. Fold in flaked coconut. Dough will be stiff. I like to plop a smallish ball of dough in my hand and roll it nicely then pat/flatten it to a disk. You can just drop these by spoonfuls and they will look kinda macaroonish. If you drop by spoon make sure to pat any stray coconut into dough as it could burn. Bake 310 degrees (yes only 310 or they'll brown too much) for 12-14 mins. till lightly brown on bottoms and set on top. Cool completely.

I recently picked up some coconut extract at Wal-mart. It was on the clearance shelf for 25 cents! I love coconut and fortunately so does everyone else in my family. I'll give these a try.
