You know it's gonna happen all you gardeners out there. Those cucumbers are gonna come on soon! I didn't plant any this year...but that won't stop me from making them my favorite summer way....sweet and sour cucumbers. So simple and so very good with meat. Steaks...burgers...roasts. It just sets off meat really good. Here's what you'll need:
Sweet and Sour Cucumbers:
1 cup white vinegar
1 cup water
8 tablespoon sugar
1 tablespoon salt
2 cucumbers peeled and sliced thin
Mix first four ingredients together in medium sized bowl. Add peeled and sliced cucumbers. Refrigerate for 1-2 hours before serving to blend flavors. Keeps 2 weeks in fridge....if they last that long. Ours make it all of 2 days.
When the cucumbers are gone you will have leftover solution, don't throw it out....next post I'll show how to turn that into a tasty Italian type dressing and a few other snappy uses other than the trash can.

This reminds me of a recipe my mom used to make when I was a child. I had forgotten all about this recipe. Thanks for posting it. I'll have to get some cukes at the Farmer's market on Tuesday.
